Simply, the term means being attracted to an older man, even if you shouldn’t be.
To be of ‘beekeeping age’ means to be middle-aged or above. Therefore there’s a considerable age gap between them and the admirer.
The term was originally coined by Rick and Morty in season 4. One of the characters expresses an interest in another’s dad whilst he is tending bees.
